Mexican Street Tacos  featuring Chicken Gizzards from Marion Acres

Most of us like to find good, locally sourced ingredients that are raised in a humane and sustainable way. 

We were excited to collaborate with our friends at Marion Acres, who offer pasture-raised chicken and other incredible locally sourced products, to create a simply delicious taco using an ingredient that by all account would go unnoticed unless it’s forced into the spotlight – chicken gizzards.

The results were not only delicious but easy to replicate for a long summer of good eats and beyond.

 

Ingredients

1-2 lbs of Marion Acres chicken gizzards

Juice from 1 whole large lemon

1 cup of buttermilk 

1/2 tablespoon chili powder

1/2 tablespoon garlic powder

1 teaspoon cumin powder

1 teaspoon coriander powder

Cooking oil – to coat meat

Season with salt & pepper

Queso Fresco cheese

Fresh homemade* or store bought tortillas (for an incredible homemade tortilla recipe we suggest visiting our friend Susana Villasuso

Favorite taco fillings

Step 1.  Rinse & Tenderize 

First, rinse the gizzards and then pat dry with a paper towel. Next, use a kitchen mallet to tenderize the gizzards. Just a few good whacks to help soften the muscle. 

After tenderizing, add the gizzards into a rectangle dish or ziplock bag along with the lemon juice and buttermilk to marinate. Ideally, you’ll want to let these sit overnight, but if in a hurry a couple of hours will do. Feel free to use more buttermilk if needed to fully submerge the gizzards. 

Step 2. Spices

Let’s make our spice mixture for seasoning. Take the chili, garlic, cumin and coriander powder and mix together in a small bowl and set aside for when you season later. 

Step 3. Let’s get ready

Remove the gizzards from the marinade and pat dry each one. Transfer them to a clean bowl and toss with your choice of cooking oil. Start with 1 tablespoon of oil. We want to coat these, not drench them in oil. Add more oil accordingly. Next apply your seasonings making sure each one is nicely covered with the spices. Add salt and pepper to liking. 

Step 4. Grilling

To get nice grill marks, skewer these and grilled them in a cast iron grill pan or feel free to grill these up on a BBQ. Grill for 15 minutes turning every 3-4 minutes to cook evenly. 

Once cooked, remove the gizzards from the skewers and roughly chop to small bite size pieces that will fit into a tortilla. 

Now your ready to assemble your taco with all your favorite fillings and enjoy!
